This roasted potato recipe is so simple yet amazingly delicious. These will become your go to side dish for everyday meals and even for holidays.

For this recipe, I seasoned it with salt, pepper and fresh oregano. However, it’s up to you what you put on it. You can use dried oregano if you don’t have fresh, or you can use rosemary, thyme or any other seasoning you like. Experiment with different combos to see what you like best.
Roasted Potatoes at 350
This recipe calls for the oven temperate to be at 350. This temp makes it easy to cook it along with other oven items, especially during the holidays.
Try to keep cut the wedges on the thin side. This allows the potatoes to cook throughly after just 30 minutes.
To cook them, I used my Silpat mat on my sheet pan but you can also use parchment paper if you don’t have a mat.
Oven Roasted Potato Wedges
Cook these babies in the oven or, if it’s mid summer and you don’t want to heat up the house, fire up the grill. Cooking roasted potato wedges on the grill is easy, just place your sheet pan right on the grill and cook them for the same amount of time as the oven. Just be sure to not let the grill temperature get too high.

Ingredients
- 5 Potatoes, Red or Yellow
- 4 tbsp olive oil
- salt to taste
- pepper to taste
- oregano fresh or dried to taste
Instructions
- Preheat oven or gril to 350
- Cover sheet pan with parchment paper or slippat mat
- Cut potatoes into thin wedges, leave skin on
- Place potatoes on the sheet pan and add the olive oil, salt, pepper and oregano
- Toss well to coat
- Arrange potato wedges in a single layer
- Cook for 30 minutes. There is no need to flip them. One side will brown up nicely. Once tossed together on your plate or in a serving bowl, it will look like both sides are browned up. No need to spend the time flipping them.
