Cover sheet pan with parchment paper or slippat mat
Cut potatoes into thin wedges, leave skin on
Place potatoes on the sheet pan and add the olive oil, salt, pepper and oregano
Toss well to coat
Arrange potato wedges in a single layer
Cook for 30 minutes. There is no need to flip them. One side will brown up nicely. Once tossed together on your plate or in a serving bowl, it will look like both sides are browned up. No need to spend the time flipping them.
